  • 2 tsp Olive Oil
  • 1 cup Yellow Onion (generic)
  • 1 tbsp Garlic
  • 2 cups Corn Cut Cans
  • 3 cups Spinach
  • 14 1/2 oz Diced Tomatoes
  • 2 cups Barley, Cooked
  • 1/4 tsp Ground Cumin
  • 1/4 tsp Oregano, Ground
  • 1/4 tsp Pepper, Black
  • 1/8 tsp Cooking Spray
  • 2 cups Sharp Cheddar Cheese-Shredded

Preparation

Step 1

Preheat oven to 350*F.

Heat oil in very large nonstick skillet over medium heat. Add onion, garlic, corn, and spinach; cook, stirring frequently, until onion is translucent and spinach is tender, about 5 minutes. Stir in tomatoes, chilies, cooked barley, cumin, oregano, pepper, heat through.

Coat a 2.5 - 3-quart baking dish with cooking spray. Spoon barley mixture into prepared dish in an even layer; sprinkle with cheese. Bake until cheese melts and mixture is hot, about 25-30 minutes. Remove from oven and let stand for 5 minutes before slicing into six pieces. Yields one piece per serving.
