Red Potato Smashies

  • Red potatoes for the number needed
  • Sea salt
  • Pepper
  • Dried Parsley Flakes
  • Parmesan Cheese (either grated or fresh)
  • Olive oil

Cooking time 40mins


Step 1

Preheat oven to 450. Boil potatoes until fork tender. Drain water. Place a circle of olive oil on a cookie sheet to about the size of the potato and place the potato in the circle. Smash the potato with a potato hand masher. Turn masher and smash again. The potato should resemble a thick cookie. Drizzle with olive oil. Add the desired amount of sea salt, pepper. parsley flakes and Parmesan cheese. Drizzle with olive oil again. Bake for 20 minutes.
