Fancy Black Baked Beans

Ingredients

  • 2 cups dried black beans,
  • rinsed and drained
  • 4 cups chicken stock
  • 4 cups cold water
  • 1/2 pound diced bacon
  • 1 large diced onion
  • 2 diced carrots
  • 2 diced celery ribs
  • 4 cloves chopped garlic
  • 1 Tablespoon chili powder
  • 1 Tablespoon cumin
  • 2 teaspoons salt
  • 12 ( 6 inch ) corn tortillas
  • 1/4 pound crumbled feta cheese
  • 1/4 cup chopped pickled jalapenos

Preparation

Step 1

Preheat oven to 300 degrees. Combine the beans, stock, and cold water in a dutch oven. Bring to a boil, cover, place in oven, and bake 2 hours. Meanwhile, in a skillet at medium heat, brown the bacon until crispy. Remove the bacon from the pan, reserving the grease. Saute the onion, celery, carrots, and garlic, cooking until soft but not brown. Remove bean pot from oven, stir in the vegetables mixture, and add the chili powder, cumin, and salt. Cover and bake until the beans are cooked and the liquid is absorbed, about 1 hour. Preheat a comal, grill, or skillet at medium-high on the stove, then add tortillas and char, individually or in batches, 3 minutes per side. Garnish the beans with the feta, bacon, and jalapenos.
