Linguine with Spinach & Tomatoes

There are some recipes that truly can be prepared in a flash.

Today’s simple pasta dish is one of them. The list of ingredients isn’t complicated and probably the only thing you’ll have to buy that might not be on your weekly grocery list is fresh spinach.

This dish is great on its own or accompanied with barbecued chicken. This is how I’ve enjoyed it.

The flavour of the tomatoes is infused in the oil, along with the garlic. Although four cups of spinach may seem like a lot when you put in the pan, it quickly decreases in size and doesn’t overpower the dish at all.

The chicken broth gives the recipe a little sauce which is needed and absorbed when you add the drained pasta.

By putting the pasta in the frying pan with the tomato/spinach mixture and adding additional olive oil, the pasta becomes moist with each strand wet from the oil.

Serve with leftover barbecued chicken or pork or simply on its own with some whole grain crusty bread.

Ingredients

  • linguine for four people
  • 3 tablespoons (45 ml) olive oil
  • 2 garlic cloves, finely cut
  • 1 cup (250 ml) grape tomatoes, halved
  • 4 cups (1 litre) loose leaf spinach leaves, torn from stem
  • 1 cup (250 ml) chicken broth
  • dash of dried hot chili peppers
  • 1 tablespoon (15 ml) olive oil (second amount)

Preparation

Step 1

1. In a large pot, boil water and add salt, preparing for the pasta. Once the water is boiling, cook the linguine on medium heat.

2. In a large frying pan, heat the oil. Add the garlic and fry for about two minutes, then add the tomatoes and fry for about three to four minutes. With a wooden spoon, stir the tomatoes, occasionally crushing some of the tomatoes with the back of the spoon.

3. Add the spinach to the tomato mixture and stir. Once the spinach turns a bright green, add the chicken broth and simmer. Add a dash of hot chili peppers.

4. Once the pasta is al dente, add the drained linguine to the frying pan. Pour in the second amount of olive oil and gently mix all the ingredients until the pasta is covered.

5. Feeds four people.
