Ingredients
- 1/4 c. vegetable shortening, melted, plus additional for greasing molds
- 2 c. yellow cornmeal
- 1 c. all-purpose flour
- 1 TBSP. baking powder
- 1 tsp. salt
- 1 tsp. sugar
- 1/2 tsp. baking soda
- 1 3/4 c. well-shaken buttermilk
- 2 large eggs
Preparation
Step 1
Preheat oven to 450 degrees. Grease 18 (5x1 1/2") cornstick molds generously with shortening and heat in oven 10 minutes.
While molds are heating, in a bowl, whisk together dry ingredients. Add remaining ingredients and whisk batter just until combined. Remove molds from oven and divide batter among them, spreading it evenly.
