Ingredients
- 3 tablespoons extra virgin olive oil
- 2 teaspoons salt
- 1 teaspoon Italian seasoning
- 1/2 teaspoon pepper
- 1/2 teaspoon BAM
- 1 pound red potatoes, cut into bite size
- 1 pound carrots, peeled and sliced
- 1 medium onion, cut into bite size
- 1 medium yellow squash, cut into bite size
- 1 medium red bell pepper, cut into bite size

PREHEAT oven to 425.
COMBINE 1T of olive oil, 1t. of salt, 1/2t of Italian seasoning, 1/4t pepper, and 1/4t bam in a medium bowl. Toss the potatoes in this mixture and place them in a roasting pan. Roast for 20 minutes.
MEANWHILE combine the remaining 2T olive oil, 1t salt, 1/2t Italian seasoning, 1/4t pepper and 1/4tbam in another medium bowl. Toss the carrots, squash, onion, and bell pepper in this mix and reserve for roasting.
AFTER roasting the potatoes, add the carrots mixture and stir to combine. Return to oven and increase to 475. Roast until all the veggies are tender and have a nice color, about 40 minutes longer. Stir the pan at least once in that time to ensure even browing. Allow 10 minutes to cool before serving.
