Peanut Butter and Jelly Bars

Delicious bar cookie! A great adaptation of your basic pb&j bar!!

Ingredients

  • Dough:
  • 1/4 cup butter, softened
  • 1/4 cup shortening
  • 1/4 cup creamy peanut butter
  • 1 cup packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 eg
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1-10 oz jar strawberry preserves or jam
  • Topping:
  • 1 cup REGULAR rolled oats
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon cinnamon
  • 2 tablespoons butter

Preparation

Step 1

For dough:
In a large bowl, combine butter, shortening, and peanut butter. Beat with electric mixer on medium to high speed for 30 seconds.

Add brown sugar, baking powder, salt, cinnamon and nutmeg. Beat until combined, scraping bowl as needed. Beat in egg and vanilla until combined. Beat in the flour.

Using 2 cups of this dough, press it evenly into an ungresed 9x13 baking pan. Bake in a preheated oven set to 375 for 10 minutes until set.

Spread the preserve or jam over the warm crust. Gently.

Add oats, brown sugar, and cinnamon to the remaining dough. Cut in butter until combined and crumbly. Sprinkle crumb mixture over the preserves.

Bake for 15-18 minutes more or until top is lightly browned. Cool in pan on wire rack. Cut into 24 bars!
