Firey Fish Tacos

Ingredients

  • 2/3 cup corn
  • 1/3 cup diced red onion
  • 2/3 cup peeled, chopped jicama
  • 1/3 cup diced red bell pepper
  • 2/3 cup fresh cilantro leaves, finely chopped
  • 1/2-1 lime, zested and juiced
  • 1 Tbls. and 1 tsp. sour cream (more or less)
  • 1 Tbls. and 1 tsp. cayenne pepper (more or less)
  • 2 tsp. black pepper
  • 1 Tbls. and 1 tsp. salt (more or less)
  • 4 (4 ounce) tilapia fillets
  • 1 Tbls and 1 tsp. olive oil
  • 8 corn tortillas, warmed
  • Serve with Mexican Rice

Preparation

Step 1

1.Preheat grill for high heat.
2.In a medium bowl, mix the corn, red onion, jicama, red bell pepper, & cilantro.
3.Stir in lime juice and zest.
4.In a small bowl, combine cayenne pepper,ground black pepper & salt.
5.Brush each fillet with olive oil, and sprinkle with spices.
6.Arrange fillets on grill grate, and cook for 3 minutes per side - or broil.
7.For each fish taco, top two corn tortillas with chopped fish, sour cream & corn salsa.
