Pepper-Crusted Grouper with Vegetable Medley

Ingredients
- 1 lb grouper fillets
- 1 t salt (optional)
- 3-4 T pepper rub or seasoning blend
- 1 T dried oregano, rosemary or other herb
- 2 T EVOO, divided
- 12oz package frozen vegetables
- Optional garnishes: oregano sprig, lemon wedges
Preparation
Step 1
1. Sprinkle fish w/ salt.
2. Spread rub & dried herb on a plate.
3. Gently press fish into pepper mixture to adhere to rub.
4. Turn over & repeat to completely coat.
5. Heat lg nonstick skillet over med heat.
6. Add 1T EVOO & swirl it to coat pan.
7. When pan is hot, lightly shake any loose coating from fish; place fish in pan.
8. Cook until bottom side is crusty, ~3 min (for .5" thick fish).
9. When turning fish to other side, add remaining oil.
10. Cook until crusty.
11. As fish cooks, [steam] vegetables.
12. Serve fish w/ or atop vegetables.
