Greek Salad 1

Ingredients

  • 1/3 cup red wine vinegar
  • 2 teaspoons lemon juice
  • 1 tablespoon oregano
  • 1/2 teaspoon basil
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon sugar
  • 1 head lettuce
  • 1 tablespoon olive oil
  • 12 each Kalamata olives, pitted
  • 1 medium tomato cut into 12 pieces
  • 1 medium red onion, slivered
  • 1/2 cup whole pepperoncinis
  • 2 ounces reduced fat feta cheese, crumbled
  • pepper

Preparation

Step 1

IN a salad bowl, combine the vinegar, lemon juice, oregano, basil, parsley, and sugar. Mix well.

CHOP or break the lettuce. WHile the leaves are on a tray or cutting board, lightly spray the lettuce with olive oil spray or toss in the olive oil. Add to the salad and toss. Add the olives, tomatoes, onions, and pepperoncinis.

PLATE the salad and crumble the feta cheese ontop. Sprinkle with freshly ground pepper.
