Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 tsp. grated lemon zest
  • 2 tbsp lemon juice
  • 1 1/2 tsp. dried greek seasonings
  • 1 clove garlic, finely minced
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 3 cups chopped romain lettuce
  • 3 cups chopped red leaf lettuce
  • 1/4 cup sliced fresh basil
  • 1 cucumber, peeled, halved lengthwise and cut crosswise in 1/2 inch slices
  • 2 medium tomatoes cut into 1/2 inch chunks about 2 cups
  • 1 can (14 oz.) artichoke hearts, drained, quartered

Step 1

In small bowl whisk together oil, lemon zest and juice. Greek seasoning, garlic, salt and pepper.

Just before serving, in bowl, toss lettuces with basil. Add cucumber, tomatoes and artichoke hearts. Drizzle with dressing, toss until well combined.

For a creamy twist on the dressing just stir the lemon zest and greek seasoning into 1/3 cup ranch dressing.
