Mozarella Pasta Salad

Ingredients

  • 2 cups corkscrew pasta cooked and drained
  • 10 ounces fresh spinach torn in bite size pieces
  • 2 cups chopped cooked bacon
  • 1 can diced green chiles 4oz, drained
  • 2 cups mozzarella cheese, cubed
  • 3/4 cup shredded cheddar cheese
  • 1 can black olives sliced or whole
  • Dressing
  • 1 cup vegetable oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup white wine vinegar or white vinegar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cloves
  • 1 clove garlic, minced

Preparation

Step 1

TOSS together first seven ingredients; cover and chill.

TO make the dressing, place ingredients in a blender and blend til smooth. Pour dressing over salad and toss to coat. Serve immediately.
