Pasta Vegetable Salad

Notes: This salad does not really have to go by measurement. For instance, I like to put in a lot more avocados and usually two jars of the artichoke hearts. I love Paul Newmans Italian dressing too!!

Ingredients

  • 1 1/2 cups uncooked shell macaroni
  • 1/2 cup sliced zucchini
  • 1/2 cup small broccoli florets
  • 2 Tablespoons chopped green onions
  • 1 cup sliced mushrooms
  • 6 ounces jar of artichoke hearts, drained and cut
  • 2/3 cup Italian salad dressing
  • 1 cup cherry tomatoes
  • 1 each avocado peeled and cubed

Preparation

Step 1

Cook macaroni to desired doneness as directed on package. Drain; rinse with cold water. In large bowl, combine cooked macaroni, zucchini, broccoli, onions, mushrooms, artichokes, and salad dressing. Toss gently. Cover and refrigerate for at least 3 hours to blend flavors. Just before serving stir in the tomatos and avocado.
