Chilled Summer Vegetable Chowder

Ingredients

  • 1 long European seedless cucumber, peeled and finely diced
  • 1 cup plain nonfat yogurt
  • 1 teaspoon ground white pepper
  • 1 teaspoon salt
  • 2 plum tomatoes, peeled and finely diced
  • 1/4 cup finely diced zucchini
  • 1/4 cup yellow corn kernels
  • 1/4 cup jicama, peeled and finely diced, or water chestnuts
  • 1 scallions, finely diced
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon basil, finely shredded

Preparation

Step 1

Combine all ingredients in a medium bowl. Cover and refrigerate for 2 hours before serving to blend flavors.
