Tomato Basil Soup

Ingredients

  • 4 cups chopped seeded peeled tomoatos
  • 4 cups V-8 Juice
  • 1/3 cup fresh basil (chopped)
  • 1 cups 2% milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup 1/3 less-fat cream cheese softened
  • 2-3 tbls brown sugar

Preparation

Step 1

Bring tomatoes and juice to a boil in a large saucepan. Reduce heat, simmer uncovered for 30 minutes

Place tomato mixture and basil in a blender or food processor until smooth. Return puree to pan and add milk, salt and pepper and brown sugar. Then add cream cheese and stir with a risk. Cover and cook for 5 minutes until thickened.

Garnish with sliced basil

Store in an airtight container for up to 1 week.
