Ingredients
- 4 cups dried navy beans
- 10 cups water
- a package of sliced salt-pork
- 2 minced white onions
- 1/2 cup tomato paste
- 1/2 cup maple syrup
- 1/2 cup brown sugar
- 1/3 cup molasses
- 1 Tablespoon dry mustard
Preparation
Step 1
Pre-soak the beans in the water overnight, drain, rinse, and add fresh water to cover. Bring to a boil over high heat, then cover and simmer until tender, about 30 minutes. Pre-heat oven to 325 degrees. Line the bottom and sides of a bean-pot, Dutch oven, or casserole dish with slices of salt pork. Add the onions to the beans. Combine the tomato paste, syrup, sugar, molasses, and mustard. Pour over the beans. Pour the beans into the pot. Cover and bake, stirring sometimes, until the sauce has thickened and the beans are softened, about 3 hours. Remove the salt-pork slices before serving.
