Peach Custard Ice Cream

Ingredients

  • 3 c 1/2 & 1/2
  • 6 egg yolks
  • 1/2 tsp salt
  • 1-1/2 tsp vanilla
  • 1-1/2 c sugar
  • 1 pound peaches, peeled, sliced
  • 1/4 c light corn syrup
  • 2 c heavy cream

Step 1

Scald 1/2 & 1/2 but do not boil.

In large bowl beat egg yolks & salt. Stirring constantly, add hot 1/2&1/2 in thin stream. Add vanmilla. Pour mixture into a heavy pot and add 1-1/4 c of sugar.

Stir over medium heat until custard thickens and coats back of spoon, about 4 minuts. Do not boil. Strain into a large bowl. Refrigerate until cold, about 3 hours.

In medium pot, place peaches, corn syrup and remaining 1/4 c sugar, heat over medium until peaches are warmed through, about 4 minutes. Mash to coarse puree. Cool completely. Stir into custard with the heavy cream. Process in ice cream maker according to manufacturer's instructions.
