Eggs with Mushrooms and Spinich

Ingredients

  • 4 tsp. olive oil
  • 10 oz. chopped spinich
  • 8 oz. mushrooms chopped
  • 8 eggs
  • coarse salt and ground pepper

Preparation

Step 1

Preheat oven to 400' with rack in upper 3rd of over. Prepare parchment paper: fold paper in half and cut into a half heart shape. Unfold and fill pinch edges tightly. Place two pieces on each of two rimmed baking sheets. Brush half of heart with oil. Place spinach and mushrooms on parchment. Crack two eggs over each and drizzle them with 1 tsp. of oil each. Season with Salt and pepper. Bake until egg whites are set 6-9 minutes rotating half way through. Serve immediately.
