Ingredients
- 1/2 cup sugar
- 1/2 cup water
- 1/2 cup lemon or meyer lemon juice
- 4 slices peeled cucumber
- Ice
- Champagne
- Cucumber spears
- Lemon wheels

Preparation
Step 1
Simmer sugar, water and lemon or meyer lemon juice until the sugar dissolves, about 5 minutes; let cool. In a cocktail shaker, crush cucumber with a muddler or wooden spoon. Fill the shaker with ice, add the lemon mixture and shake well. Strain into 2 flutes. Top with champagne and garnish each with a cucumber spear and lemon wheel.
