GRILLED PIZZA WITH TOMATO GARLIC SAUCE

Grilled pizzas beat delivery any day. You can add exactly the toppings you like and as much or as little as you like. If you are unable to find pre-sliced mozzerella cheese, you can use dental floss to slice the cheese. My favorite topping is fresh basil which I slice with a pizza cutter. For the dough, I use the "Weber's Real Grilling" cookbook recipe; use your own or store bought.

Ingredients

  • Dough:
  • 1 Envelope Active Dry Yeast
  • 1/2 tsp granulated sugar
  • 2.5 cups all purpose flour + more for
  • rolling out dough
  • 1 tsp kosher salt
  • Olive Oil
  • Sauce:
  • 14.5 oz can Fire Roasted Diced Tomatoes
  • 6 oz. tomato paste
  • 1/2 Tbs Herbs De Provence
  • 2 packets Stevia
  • 3 Tbs chopped garlic
  • 1 Tbs olive oil
  • Toppings:
  • Several Basil leaves, cut into strips
  • Fresh Mozzarella, sliced
  • Pitted Black Olives, sliced
  • Pimento Stuffed Green Olives, halved
  • Pepperoni
  • Fresh Mushroom, sliced

Step 1

Dough: In medium glass or stainless bowl, mix the yeast with sugar and 3/4 cup warm water. Stir once and let stande 5-10 minutes until foamy. Add the flour, 3 tbs olive oil and the salt. Stir until mixture holds together. Transfer to floured surface and knead 4-6 minutes. Shape into a ball and place in an oiled glass bowl; turning to cover the dough with the oil. Cover bowl with plastic wrap or a kitchen towel and let rise in a warm place unti doubled in size, approx 1-1.5 hrs. Punch down the dough and moved to floured surface; divide into 4 sections. Roll each piece into 8 inch circle or rectangular size. Cut four pieces of wax paper a little bigger than each size of rolled dough. Brush one side of wax paper with olive oil and place dough on top. Now brush the unoiled side (top) of the dough with a little olive oil.

Sauce: Heat small skillet with 1 tbs oilve oil; add garlic and cook until fragrant and tanned colored. Remove with slotted spoon to food processor. Add remaining ingredients to food processor and blend until smooth.

Heat clean grill to medium. Place oiled side of dough directly on grill, then pull of wax paper. Grill for approx 3 min then remove to baking sheet, placing the cooked side up. Add the sauce and toppings and return to grill until crust is browned and toppings are heated through.

NOTE: If you have a rotisserie burner on your grill, turn it on low and this will speed up heating your toppings.
