Ingredients
- 1 pound Jumbo Shrimp (12) peeled and deveined
- Juice of one lemon
- 3 tablespoons cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons chopped fresh oregano
- 1/2 teaspoon Maldon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 lemon cut into four wedges
- 3 cloves of garlic, minced
Preparation
Step 1
Place the shrimp in a large bowl. Add the remaining ingredients and combine thoroughly.
Cover and refrigerate 1 to 3 hours.
Heat the grill to high. Remove the shrimp from the marinade. Bring the marinade to a boil in a small pot and reserve. Place the shrimp on the grill in a line on one side. Grill for three minutes on each side until shrimp is charged slightly. Serve with the cooked marinade and fresh lemon wedges.
Serve it with a cool cucumber, tomato, feta and mint salad!
