Ingredients
- 2 tblsp. oil
- 1 medium onion, chopped
- 6 medium zucchini (2 lb.), peeled & chopped
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tblsp. flour
- 5 1/2 c. chicken broth

Preparation
Step 1
1. In a large pot heat oil.
2. Saute onion until tender.
3. Add zucchini & seasoning.
4. Cover & cook over low heat for 10 minutes until tender.
5. Stir in flour. Cook 1 minute.
6. Bring to a boil & cook 5 minutes.
7. Cool 30 minutes. Puree.
