Ingredients
- FROSTING:
- 1 C shortening (I like butter better....)
- 1 C sugar
- 1 egg
- 1 C canned pumpkin
- 1 tsp vanilla
- 2 C all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp salt
- 1 C chopped nuts
- 1 C chopped dates
- 1 C raisins (I like golden)
- 3 Tbsp butter
- 1/2 C brown sugar
- 4 Tbsp milk
- 1 C powdered sugar
- 1 tsp vanilla.

Preparation
Step 1
Cream together butter and sugar Add egg and beat until fluffy. Stir in pumpkin and vanilla.
Combine in a small bowl: Flour, baking powder, baking soda, cinnamon, salt.
Add to wet ingredients and stir gently until incorporated.
Stir in nuts, dates, raisins.
Drop by Tablespoonfuls onto greased cookie sheet (I use parchment paper - easier to clean up!) Bake at 375 for 10-12 minutes.
When cool, frost.
FROSTING:
Combine butter, brown sugar and milk in a small saucepan and boil for two minutes, stirring constantly. Cool.
Beat in powdered sugar and vanilla.
Frost cookies.
