Slow Cooked Curry Chicken

Ingredients

  • 6 boneless skinless chicken breast halves (6oz each)
  • 1-1/4 tsp salt
  • 1 can (14oz) light coconut milk
  • 1 tsp curry powder
  • 1/2 tsp grd. turmeric
  • 1/2 tsp cayenne pepper
  • 3 green onions, sliced, divided
  • 2 TBL cornstarch
  • 2 TBL cold water
  • 1-2 TBL lime juice
  • 3 C hot cooked rice

Preparation

Step 1

sprinkle chicken w/ salt
in lg. cnonstick skillet, coated w/ cooking spray, brown chicken on both sides
place in 5QT slow cooker

combine coconut milk, curry turmeric & cayenne
pour over chicken
sprinklw w/ half of the onions
cover & cook on low for 3-1/2 to 4-1/2 hrs or until chicken is tender

combine cornstarch & water until smooth
stir into slow cooker
cover & cook on high for 30 min or until sauce is thickened
stir in lime juice
serve chicken & sauce over rice
sprinkle with remaining onions
