Ingredients
- 5 C chicken stock or canned chicken broth
- 1 yellow onion, diced (abt 1-1/2C)
- 1 tart green apple, peeled & sliced
- 1 sm. potato, peeled & thinly sliced
- 3 C chopped broccoli (abt 1LB)
- 1 TBL curry powder
- 1 tsp grd ginger
- 1 C nonfat plain yogurt
- salt
- freshly grd pepper
- lemon sliced or mint leaves for garnish
Preparation
Step 1
in lg. saucepan, bring 2C of stock to boil
add onion & simmer over med heat until onion is translucent - abt. 10 min
add apple & potato - cook until tender, abt. 20 min
add broccoli, curry, ginger & remaining 3 C of stock
simmer until broccoli is tender, abt 10 min
puree soup in batches in blender
whisk in yogurt
adjust seasoning w/ S & P
to serve, garnish w/ lemon slices or chopped mint leaves.
