Northwest Autum Salad (Waldorf)

Ingredients

  • SALAD:
  • 1 head Red leaf lettuce
  • 1 head bibb lettuce
  • 1 cup watercress leaves
  • 2 apples (Fuji or Gala)
  • 3/4 cup candied walnuts
  • 3/4 cup crumbled blue cheese
  • 1 avacado (opt.)
  • DRESSING:
  • 1/2 cup veg. oil
  • 1/4 cup cider vinegar
  • 2 Tbsp. shallots
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. maple syrup
  • 1/4 tsp. ea salt and fresh ground pepper

Preparation

Step 1

Make dressing in advance and let sit.

To candy walnuts:
Put 1/4 cup sugar in non-stick pan over med-hi heat (med may be best). Tilt and shake until melted. Add 2 Tbsp. water – stir evenly melted and thickened. Add walnuits to coat, then spread on parchment paper to cool.

Tear lettuce into bowls. Add watercress leaves, then apple (cut into thin wedges). Sprinkle with walnuts and cheese and avacado. Drizzle the dressing over the top. Toss if desired.
