Ingredients
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup butter
- 1 cup sugar
- 1 each unbeaten egg
- 1 cup undrained crushed pineapple
- 1 teaspoon vanilla
- 1/2 cup shredded coconut
- 1/2 cup packed brown sugar
Preparation
Step 1
SIFT together first three ingredients.
CREAM together the butter and sugar.
ADD the egg, pineapple and vanilla. Stir into the dry ingredients and put in a greased and floured 9 inch square pan.
COMBINE the coconut and brown sugar and sprinkle over the batter and bake at 350 for 35 to 40 minutes.
SERVE warm or cold with icecream.
