Ingredients
- 3 to 4 cups washed baby spinach leaves
- 1/2 cup thinly sliced red onion
- 3-4 tablespoons crumbled blue cheese ~ fat free
- 1/2 small apple, cut into 1/4 inch cubes
Preparation
Step 1
Divide the spinach leaves between four salad plates.
Lay the thinly sliced red onion over the spinach on each plate.
Sprinkle on the apple.
Spoon on your choice of low carb salad dressing such as Feta Vinaigrette and toss lightly.
