Peanut Butter filled Chocolate cupcakes

  • Peanut butter filling:
  • 2/3 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 stick butter, cut into pieces
  • 6 oz chocolate, chips or chopped
  • 3/4 cup sugar
  • 3 eggs
  • 2 tsp vanilla
  • 4 tbsp butter, melted
  • 1/2 cup powdered sugar
  • 3/4 cup peanut butter
  • 1/4 tsp salt
  • 1 tsp vanilla

Preparation

Step 1

Make filling: stir together all ingredients for filling.

Preheat oven to 325. Whisk together flour, baking powder and salt. Melt butter and chocolate together. Let cool slightly.
Whisk sugar into chocolate mixture. Add eggs, whisk until smooth. Stir in vanilla. Add flour mix, stir until combined.
Fill cupcake tins: 2 tbsp chocolate, 1 tbsp peanut butter, 1 tbsp chocolate. Bake 20-25 minutes. Let cool completely.
Can be served plain, or with chocolate frosting.
