Turtle Pumpkin Pie
- 1/4 c. & 2 T. caramel topping
- 1 graham cracker crust - large one
- 1/2 c. & 2 T. chopped pecans
- 2 (3.4 oz.) instant vanilla pudding mix
- 1 cup cold milk
- 1 cup canned pumpkin
- 1 t. ground cinnamon
- 1/2 t. ground nutmeg
- 1 - 8oz. cool-whip, thawed
Pour 1/4 cup caramel into crust. Sprinkle with 1/2 cup nuts.
Beat dry pudding mix, milk, pumpkin, and spices with whisk until well blended. Stir in 1 & 1/2 cups cool whip; spoon into crust.
Refridgerate 1 hour. Top with remaining cool whip, caramel, and nuts just before serving.
