Pecan Pie

Ingredients

  • Pastry:
  • 3 oz cream cream
  • 1 stick of butter
  • 1 cup flour
  • pinch of salt
  • Filling:
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tbsp melted butter
  • 1 tsp vanilla
  • 1/2 cup crushed pecans

Preparation

Step 1

Pastry:
Cream together cream cheese and butter. Cut in flour and salt using pastry blender. Pastry crust will be crumbly. Refrigerate dough 10 minutes. Make balls from dough and press into mini muffin pan to form crust. Makes about 20.

Preheat oven to 350

Filling:
Mix together all ingredients for filling except for pecans. Pour filling into each mini muffin cup and fill 2/3 full. Top with crushed pecans.

Bake 20-25 minutes
