CRUSTY POTATOES WITH PARMESAN

Ingredients

  • 6 lg baking potatoes
  • 1/4 LB butter
  • 2 TBL veggie oil or bacon fat
  • 1 C freshly grated parmesan cheese
  • 2 tsp salt, divided
  • 1/2 tsp freshly grd black pepper, divided
  • 4 TBL melted butter, divided

Preparation

Step 1

put potatoes in saucepan
cover w/ cold water
bring to boil
boil hard uncovered for abt. 10 min
drain & peel potatoes while still warm
grate potatoes

heat 1/4 LB butter w/ oil in lg skillet over high heat until foaming subsides being careful not to let butter brown
pur abt. half the grated potatoes into skillet, pressing them down firmly w/ spatula
sprinkle w/ cheese, half the S & P
drizzle w/ 2TBL of melted butter
add remaining potatoes
press firmly w/ spatula

shake pan to make sure potato cake moves freely
if it's sticking use spatula to push potatoes in from edge of pan
drizzle w/ remaining butter
sprinkle w/ remaining S & P

cook over high heat for 5 min
then press down hard on potatoes, using a flat lid just a bit smaller then skillet
reduce heat to med & cook, keeping lid on for abt 30 min or until potatoes are crusty on sides & bottom
shake the skillet every few minutes to insure that potatoes stay afloat
unmold on round serving plate crusty side up

serve w/ sour cream
