Ingredients
- 3 lg eggs, separated
- 1/4 C flour
- 3/4 C low-fat cottage cheese
- 1/2 stick unsalted butter, melted
- 2 TBL sugar
- 1/4 tsp salt
- 1 TBL grated lemon zest
Preparation
Step 1
in lg. bowl combine egg yolks and all other ingredients
in separate bowl beat egg whites until soft peaks form
carefully fold beaten egg whites into batter, just until blended
heat lg. nonstick griddle over med. heat until hot
spray w/ cooking spray
for each pancake pour 1/4 C batter onto griddle
adjust heat to med. low
cook until lightly browned
sprinkle w/ powdered sugar accompanied by fruit & maple syrup
