Balsamic-Glazed Chicken

Ingredients

  • 2 tsp olive oil
  • 1 Tbsp water
  • 1 Tbsp balsamic vinegar
  • 1/2 tsp sugar
  • 1/4 tsp cornstarch
  • 1/4 tsp salt
  • 1/8 tsp coarsely ground black pepper
  • 2 (4 oz) skinless, boneless chicken breast halves
  • Cooking spray

Preparation

Step 1

1. Combine first 7 ingredients in a large ziplock bag. Add chicken; seal and marinate in refrigerator at least 1 hour. Remove chicken from bag; reserve marinade.

2. Heat a nonstick skillet coated with cooking spray over med-high heat. Add chicken; cook 4 min on each side or until done. Remove chicken from pan; keep warm.

3. Add vinegar mixture to pan; bring to a boil, scraping pan to loosen browned bits. Cook until reduced to 2 Tbsp (about 45 seconds). Spoon over chicken.
