Ingredients
- 4 tablespoons extra-virgin olive oil, divided
- 1 medium onion (about 6 ounces) peeled, core removed, cut in half from tip to tip and sliced in 1/4-inch pieces
- 1 red pepper (about 6 ounces), washed, cut in half, stem and seeds removed, halves cut in 1/4-inch strips
- 1 jalapeño pepper (1/2 ounce), cut in half, stem and seeds removed, pepper halves cut in very fine julienne
- 1 1/2 teaspoons kosher salt (divided), plus additional for seasoning
- 1/4 teaspoon freshly ground black pepper, plus additional for seasoning
- 2 cloves garlic (1/2 ounce), peeled, cut in half, halves sliced as thinly as possible
- 1 ripe tomato (about 6 ounces), core removed, cut in half, seeds and ribs removed, and flesh cut in 1/4-inch strips
- 1 teaspoon smoked paprika
- 2 eggs extra-large or jumbo
- 1/8 cup packed, chopped Italian parsley leaves
- 6 very thin slices prosciutto ham, each slice about 5-6 x 2 1/2-3 - inches
- 6 very thin slices optional Manchego cheese, about 2- x 3-inches
Preparation
Step 1
Place a non-stick sauté pan over medium-high heat.
When warm, add 2 tablespoons of the olive oil.
When hot, add the onions, peppers and jalpeños and sauté for 4 to 5 minutes. Add 1 teaspoon of the salt, ¼ teaspoon of pepper and the garlic and cook for 1 minute.
Add the tomatoes and cook for 1 minute.
Add the paprika and the remaining 2 tablespoons of olive oil and cook for 1 minute.
While the vegetables are cooking, beat the eggs in a bowl with a fork until light and fluffy.
Add the parsley and beat in.
When the vegetables are finished cooking, immediately pull the pan off the fire, add the remaining ½ teaspoon of salt to the beaten eggs, pour the eggs over the vegetables, and then, with a heatproof spatula, mix the eggs into thr vegetables until the eggs are loosely cooked like a light scrambled eggs. Adjust the seasoning with salt and pepper.
Lay out 3 slices of Serrano ham onto each plate.
Place a thin slice of cheese in the middle of the ham and divide the piperade onto the middle of each ham slice.
Fold the ham over to form rolls, and serve immediately.
