Quick-Roasted Potato Wedges

Ingredients

  • 1 pound small red potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Preparation

Step 1

Preheat oven to 425. Cut potatoes into wedges and toss with olive oil, salt and pepper. Arrange in a single layer on a baking sheet and bake for 25 minutes or until tender, stirring once. Toss with 2 tablespoons chopped fresh parsley.
