Creamiest Chocolate Pudding

Ingredients

  • 1/2 c. sugar
  • 3 Tb cornstarch
  • 3 Tb unsweetened cocoa
  • 1/4 tsp salt
  • 2 1/2 c. 1% milk
  • 1/2 c. evaporated fat-free milk
  • 2 oz bittersweet (60-70%)chocolate, finely chopped
  • 1 tsp vanilla
  • fresh mint sprigs (optional)

Preparation

Step 1

Combine first 4 ingredients in a medium heavy saucepan. Stir constantly with whisk.
Gradually add both milks, stirring with whisk.
Bring to a boil over med-high heat, stirring with a whisk.
Reduce heat and simmer, 1 min or until thick.
Remove from heat, add chocolate, stir until melted and mixture is smooth.
Stir in vanilla until well mixed.
Pour about 2/3 c pudding into each 6 ramekins.
Cover surface of each with plastic wrap.
Chill at least 6 hours.
Garnish with mint and/or whipped cream
