Moroccan Couscous and Chickpea Salad

I got this great recipe from Mom just after her trip to Morocco.

Ingredients

  • 1 cup couscous
  • 1/2 cup dried cherries or prunes/plums
  • 1 cup boiling water
  • 1 large orange or yellow bell pepper, cut into bite-sized sticks
  • 1 1/2 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/4 tsp cinnamon
  • 1 16-oz can chickpeas, drained
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp rice wine vinegar
  • 3 tbsp orange juice

Preparation

Step 1

Place couscous and dried fruit into a bowl. Add water and cover. Wait 5 minutes.

Saute peppers and onions 5 minutes or until tender-crisp. Season as they cook. Add to couscous, along with remaining ingredients.
