Moroccan Couscous and Chickpea Salad

I got this great recipe from Mom just after her trip to Morocco.

Ingredients
- 1 cup couscous
- 1/2 cup dried cherries or prunes/plums
- 1 cup boiling water
- 1 large orange or yellow bell pepper, cut into bite-sized sticks
- 1 1/2 tsp ground cumin
- 1/2 tsp ground ginger
- 1/4 tsp cinnamon
- 1 16-oz can chickpeas, drained
- 1/4 cup chopped fresh cilantro
- 2 tbsp rice wine vinegar
- 3 tbsp orange juice

Servings 6
Preparation
Step 1
Place couscous and dried fruit into a bowl. Add water and cover. Wait 5 minutes.
Saute peppers and onions 5 minutes or until tender-crisp. Season as they cook. Add to couscous, along with remaining ingredients.
