Ingredients
- 2 boneless skinless chicken breasts, cut into pieces abt. 2" square
- 1/4 C olive oil
- 1 clove garlic, chopped
- 1/4 LB mushrooms, sliced
- 1 C diced tomatoes (or tomato sauce)
- 1/4 C sliced black olives
- 1/2 C canned artichoke hearts (plain, not marinated)
- 1 TBL chopped parsley
- 1/4 C white wine
- 1/4 C whipping or heavy cream
- S & P
- flour
- 12 oz fettucine
Preparation
Step 1
in lg. saute pan, heat olive oil on med-high
meanwhile, coat chicken pieces w/ flour
cook chicken until golden brown on both sides
stir in garlic
turn heat on high
sprinkle wine over chicken & cook 1 min
stir in tomatoes, mushrooms, parsley, olives, artichoke hearts, S & P
turn heat to low
cover & simmer until chicken is fully cooked (abt 5-10 min)
stir in cream
serve immediately over hot linguine or fettucine
