Apple Cheddar Corn Bread

Ingredients

  • 2 cups all purpose flour
  • 1 tablespoon baking power
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup shredded cheddar cheese
  • 1/2 cup corn niblets
  • 1 cup milk
  • 1 apple (grated)
  • 1/4 cup honey

Preparation

Step 1

Preheat oven to 350 degrees.

In a large bowl, combine flour, baking power, salt, baking soda, cheese and corn. Set aside.

In a separate bowl, combine honey and milk. Mix well. Grate apple (no need to peel) and add to liquid mixture.

Stir the wet and dry ingredients together until just combined. Do not over mix! Pour batter into a greased 9 x 5 loaf pan. Bake for 50-60 minutes until bread is golden brown and a skewer poked in the centre comes out clean. Cool on a wire rack.
