Overnight Homemade Salsa

Ingredients

  • 2-3 ripe fresh tomatoes, chopped
  • 1/2 cup fresh chopped cilantro
  • 1-2 cloves of garlic, chopped
  • juice of 1/2 lime
  • 1/2 cup chopped sweet vidalia onion
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup shoepeg corn, drained
  • 1 small jalapeno pepper, chopped fine
  • ground cumin- amount to taste
  • salt and pepper to taste

Preparation

Step 1

Layer ingredients (except for lime juice) in bowl. Sprinkle lime juice over top. Refriderate overnight and toss and serve.
