Ingredients
- 2-3 ripe fresh tomatoes, chopped
- 1/2 cup fresh chopped cilantro
- 1-2 cloves of garlic, chopped
- juice of 1/2 lime
- 1/2 cup chopped sweet vidalia onion
- 1/2 cup black beans, rinsed and drained
- 1/2 cup shoepeg corn, drained
- 1 small jalapeno pepper, chopped fine
- ground cumin- amount to taste
- salt and pepper to taste
Preparation
Step 1
Layer ingredients (except for lime juice) in bowl. Sprinkle lime juice over top. Refriderate overnight and toss and serve.
