Ingredients

  • 2 cups flour
  • 1/4 cup cornmeal
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1 teaspoon onion powder
  • 1 teaspoon italian seasoning
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 4 T. shredded parmesan cheese
  • 4.5 oz shredded sharp cheddar cheese
  • 3 oz dried tomatoes, chopped
  • 4 oz chopped salami
  • 2 oz. roasted garlic, pureed
  • 3/4 cup buttermilk
  • 1 stick cold butter, diced small and chilled.
  • 1 egg for wash
  • 1 cup pizza sauce (optional)

Preparation

Step 1

Preheat oven to 400.

Combine first 8 dry ingredients in mixer.

Mix in cold, diced butter leaving small chunks of butter intact.

Add cheeses, tomatoes, salami, and garlic puree. Mix on low to combine.

Add buttermilk and mix on low just until soft dough forms.

Turn dough out onto lightly floured surface and pat into 3/4 inch thick square.

Cut into 64 mini squares.
Place on 2 lined baking sheets.
Brush with egg wash
Sprinkle with Parmesan.

Bake for 17 minutes.
Remove and cool on wire rack.
