Chicken Korma

Ingredients

  • 1 lg. potato, peeled & cut into 1/2" cubes
  • 1 lg onion, chopped
  • 1 cinnamon stick (3")
  • 1 bay leaf
  • 3 whole cloves
  • 1 TBL canola oil
  • 1 LB boneless skinless chicken breasts, cut into 1/2" cubes
  • 1 garlic clove, minced
  • 1 tsp curry powder
  • 1/2 tsp minced fresh gingerroot
  • 2 med tomatoes seeded & chopped
  • 1 tsp salt
  • 1/2 C sour cream
  • hot cooked rice

Preparation

Step 1

place potato in sm. saucepan & cover w/ water
bring to boil
reduce heat
cover & cook for 10-15 min or until tender
drain

in lg. skillet, saute onion, cinnamon, bay leaf & cloves in oil until onion is tender
add chicken, garlic, curry & ginger
cook & stir 1 min longer
stir in tomatoes, salt & potato

cover & cook for 10-15 min or until chicken is no longer pink
remove from heat
discard cinnamon, bay leaf & cloves
stir in sour cream

serve w/ rice
