Country Broiled Chicken

Ingredients

  • 2 1/2 pound chicken, cut-up
  • 1/2 cup butter
  • 1/4 cup vegetable oil
  • 2 tablespoon lemon juice
  • 2 teaspoons salt
  • 2 teaspoons sugar
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground ginger
  • 1 small onion, finely chopped (1/4 cup)
  • 1 medium garlic clove, crushed

Preparation

Step 1

Place chicken, skin sides down, on rack in broiler pan. Heat remaining
ingredients, stirring occasionally,
until butter is melted; brush on chicken.
Set oven to broil and/or 550. Place broiler pan so that top of chicken is 5-7 inches from heat.
Brush with butter mix every to 10-15 minutes and turn chicken as it browns; broil until thickest pieces are done, 40-50 minutes.
