Crockpot Kale and Sausage

Ingredients

  • 1 large bunch of kale, chopped
  • 1 1lb package cooked chicken sausage (Hot Italian is what I used) chopped into bite sized pieces
  • 1 can diced tomatoes, not drained
  • 2 cups chicken broth
  • 1 can corn, drained or 1 cup frozen corn
  • 5 cloves garlic crushed
  • 1/2 cup chopped onion
  • 1/2 jar Alfredo Sauce (I used Bertolli)
  • 6 oz pasta (I used penne)

Preparation

Step 1

Place all the ingredients except Alfredo sauce and pasta in crockpot. The kale is best placed on top so it steams and cooks down.

Cook on low for 6-7 hours stirring to mix in the kale after it wilts. In the last 45 minutes of cooking add pasta and Alfredo sauce and stir. If sauce is too thick add more chicken broth or Alfredo to desired thickness.

(This one even gets my son eating kale)
