Ingredients

  • Topping:
  • 6 C. zucchini
  • 2 to 3 small diced onions
  • 1/4 C. water
  • 1 C. grated carrots
  • 1 can cream of chicken soup
  • 1 C. sour cream
  • salt and pepper to taste
  • 2 boxes chicken stuffing
  • 1/2 C. butter

Preparation

Step 1

1. First 3 ingredients, cook 5 minutes or so and drain. (to soften zucchini)
2. Combine remaining ingredients with zucchini and stir
3. Combine 1 box of stuffing with 1/2 C. butter. Place 1/2 of stuffing on bottom of ungreased pan. Add zucchini mixture then put rest of stuffing on top. Bake at 325 for 30 minutes.
