Spicy Hoisin Salmon

Ingredients
- 1/4 c hoisin sauce
- 2 T reduced-sodium soy sauce
- 2 t rice vinegar
- 1/2 t ground ginger
- 1/4 t red pepper flakes
- 4 pieces salmon fillet
- 2 scallions, trimmed and thinly sliced
- White rice and broccoli

Preparation
Step 1
1. Heat oven to 450 F. Coat a baking dish with nonstick cooking spray.
2. In a small dish, stir together the hoisin, soy sauce, vinegar, ginger and red pepper flakes. Place salmon in prepared dish and spread top of each fillet with half of the hoisin mixture.
3. Roast 450 F for 10 mins. Spread remaining hoisin mixture over the salmon and top with the scallions. Roast for an additional 5 mins.
4. Serve with rice and broccoli.
