- Vanilla Cookie Crust
- 11 vanilla sandwich cream cookies, crushed
- 3 tablespoons butter, melted
- Tangerine Filling
- 24 ounces cream cheese
- 2/3 cup sugar
- 5 teaspoons cornstarch
- 1 tablespoon sour cream
- 3 eggs
- 1 egg yolk
- 2/3 cup frozen tagerine or ornge juice concentrate, thawed
- 1 teaspoon finely shredded orange peel
- 1 teaspoon vanilla
- 1 medium tangerine; peeled, seeded, and separated into segments

VANILLA COOKIE CRUST
In a small bowl stir together crushed cookies and melted buttter till well combined. Press crumb mixture evenly onto the bottom of a greased 9-inch springform pan.
TANGERINE FILLING
In a large bowl combine cream cheese, sugar, cornstarch, and sour cream. Beat with an electric mixer till smooth. Add eggs and egg yolk, one at a time, beating well after each addition. Beat in tangerine or orange juice concentrate, orange peel, and vanilla. Pour the cream cheese mixture over the crust. Arrange tangerine segments over the cream cheese the mixture.
Bake at 350 for 15 minutes. Lower temerature to 225
and bake for 1 hour and 10 minutes or till the center no longer looks wet or shiny. Remove the cake from the oven and run a knife around the inside edge of the pan. Chill, uncovered, overnight.
