Method
1 Preheat the oven to 200°C/ 180°C fan/Gas 6. Cut small incisions into each potato at regular intervals, making sure not to cut right through.

2 Place the potatoes on a baking sheet and drizzle with the olive oil. Tuck a bay leaf into a couple of the slices in each potato and sprinkle with sea salt. Transfer to the preheated oven and bake for 40-45 minutes or until cooked through.
