Goat Cheese and Roasted Corn Quesadillas

Ingredients

  • 1 c. fresh corn kernels (about 1 large ear)
  • 2/3 c. (5 oz) goat cheese softened
  • 8 6-in corn tortillas
  • 1/4 c. chopped green onion
  • 10 Tb salsa
  • cooking spray

Preparation

Step 1

Heat large non-stick skillet over med-high. Add corn, saute 2 mins or until browned.
Place corn in small bowl.
Add goat cheese to corn, stir until well blended.
Divide corn mixture evenly between 4 toritllas.
Sprinkle each tortilla with 1 Tb of green onions
Drizzle with salsa, top w/remaining toritllas
Heat pan to med-high. coat pan w/cooking spray. Place quesadilla on pan and cook 1 1/2 mins each side.

Repeat until all are cooked
